Edible landscape for the opening of ‘Processed Memories of Adaptations’ at WiLL!E
An edible landscape inspired by the processes, layers and life within soil. Just as soil is a site of emergence, fermentation, and decomposition, the dishes will reflect these dynamics while drawing from the elements that compose the earth’s ground: organic layers of leaves and sprouts, minerals, water, sand, and rock. The soil breathes, absorbs, transforms, breaks down in a metabolic process that is not distant from our own. We eat like the soil, we eat from the soil, and we eat the soil itself, fueled by convenience, greed and the short sightedness of anthropocentric narratives. As the dining moment evolved, guests engaged in a similar process as the installation changed—and with each bite getting a new form.
